1T Raw Chia Seeds

1/4 C Raw blueberries 

1/4C Raw blackberries 

1/4C Raw/ Shredded coconut meat

Water

*Wash all produce thoroughly. Peel and freeze all banana and 2 cups of blueberries. Add bananas and frozen blueberries to your blender. Add a small amount of water to blend but keep a thick consistency. Pour contents of blender into a bowl. Top with coconut, raw blueberries, raw blackberries and chia seeds. Add other raw toppings as desired. Enjoy!

RAW Savory Dishes

Zesty Marinara Zucchini Noodles

2 Medium zucchinis 

8 Roma tomatoes 

2 Sun dried tomatoes 

Garlic clove

3 Fresh sprigs of rosemary or 1t dried 

5 Fresh Basil leaves or 1t dried

Sea salt to taste (optional)

Fresh cracked black pepper to taste (optional)

*Wash all produce throughly. Using a vegetable spiralizer or peeler, peel the zucchini down to the seeds to create the noodles. Save the seeds for the sauce. Add all ingredients except the noodles to the blender. Add the zucchini seeds to the blender also. Blend until smooth. Adjust seasonings to taste. Pour the sauce over the noodles in a bowl and enjoy. (OPTIONAL) Coarsely chop your favorite raw vegetables to top off the dish.

*Wash all produce thoroughly. Peel and core required vegetables. Add all ingredients to your blender and blend until smooth. Pour into a bowl. Dice a few of the ingredients and mix in for texture and enjoy!

1/2 cup tahini (raw) 

1 garlic clove, finely chopped 

3 tablespoons fresh lemon juice 

3/4 teaspoon sea salt (optional) 

1/2 t ground cumin 

2/3 to 3/4 cups water (as needed)

*In a blender, blend the tahini, garlic, lemon juice, salt, pepper, and 2⁄3 cup of the water, adding more until you reach the desired consistency. This dressing can be stored in an airtight container in the refrigerator for up to a week.

1 C Frozen mango (sweet & Thawed) or 1 C Fresh mango peeled and pitted

2T Fresh lime juice 

2 Sweet mini peppers

Drop all ingredients into a high speed blender and go. Add water as needed to get the desired consistency. Use a silicone spatula to get it all out into an air tight glass jar to keep in the fridge or drizzle over your favorite salad immediately.

2 Avocados 

1/4 Bunch of cilantro 

1 Roma tomato 

2T Red onion 

1t Cumin

1 jalapeño diced (optional)

Sea salt, to taste (optional)

*Split the avocado in half and twist apart. Remove the pit and scoop the meat out of the avocado into a bowl. Chop and add the tomato, cilantro and onion to the bowl. Add the cumin and salt. Mash the mixture together with a fork and enjoy.

1 C Soak raw cashew nuts 

2 or more Soaked pitted dates (add to taste for desired sweetness level)

Scrapings to taste from a vanilla bean

1 T Fresh Lemon juice

Water

Soak Cashews overnight. Drain and discard water. Soak dates and use excess water as needed to blend for a creamy thick consistency. Drop all ingredients into a high speed blender and go. Use a silicone spatula to get it all out into an air tight glass jar to keep in the fridge or add to a bowl and enjoy with your favorite fruit.

*Wash all produce thoroughly. Soak Dates, Peel and juice lemon. Add all ingredients to a high speed blender. Add a few drops of fresh lemon juice as you blend, but just enough to keep an “ice cream” style texture. Use a silicone spatula to scrape the sides of the blender as needed and add to a bowl and enjoy. The bowl can also be placed in the freezer for about an hour or less to create a scoopable presentation. Eat Immediately.

Add a few drops of water as you blend, but just enough to keep an “ice cream” style texture. Use a silicone spatula to scrape the sides of the blender as needed and add to a bowl. Stir in 1 tablespoon of nuts. Sprinkle 1 tablespoon on top and enjoy. Eat Immediately.

Place All ingredients in a glass jug or jar. Cold steep for 4 hours in the refrigerator.

Plant Milks

Creamy Nut Milk

1C Raw almonds or cashews 

1Q Distilled water 

Extra distilled water for soaking nuts

Scrappings from vanilla bean to taste

4 Soaked pitted dates or more with water to taste

*Soak nuts for 6-8 hours in the refrigerator. Drain and rinse nuts with distilled water and add them to the blender with 1 quart of distilled water and all other ingredients. After blending, strain the nut milk through a nut-milk bag, cheese cloth or fine metal strainer. Squeeze nut milk bag or press metal strainer well to extract all of the liquid. The remaining almond pulp can be saved for another recipe or discarded.
 Store the nut milk in an airtight glass jar in the refrigerator for up to 4 days. You can freeze leftovers, if needed, for up to 3 months.
